When we were visiting Nash and his family in March, they cooked a great great great dish for us, a catalanian stew, with eggplant, potatoes and onions.... Yummy! Anne sent me the recipe recently and DH and I made it tonight
Anybody interested in my modified version (so it is mine, isn't it?)
It is vegetarian and vegan! and yummy!
o.k. here it comes:
1 pound of eggplant, peeled, quartered and chopped
1 pound of onions, peeled and chopped into not too fine pieces
1 pound of chickpeas, drained
1 pound of potatoes
2 teaspoons of tomatoe concentrate (paste)
2 teaspoons of finely chopped basil leaves
Juice from 1-2 Lemons
more Lemons ( 1-2)
Salt & Pepper to taste
Cook the potatoes in their peel until they are nearly done :) peel and quarter them ( or chop into mouthfriendly sizes)
Heat the olive oil and add the potaotes, the eggplant and the onions. At medium heat, let the vegetables get some colour (was ist denn bitte Anbraten auf Englisch??) then add some of the broth or white wine. Let it cook until the eggplant is soft (around 15 minutes) and than turn the heat down and let everything simmer for another 20 minutes.
Add broth/white wine, so that the stew doesn't get burned...
Add the tomatoe paste, the chopped basil leaves and the chickpeas as well as the lemon juice and let everything cook at medium to low heat for another 30 minutes.
Add Salt/Pepper to taste and decorate with slices of lemon :)
